Freezer Cooking - August Edition!

Two months ago there were two of us, last month there were four, this month...eight! We continue to have fun and grow, making this an uber-efficient freezer meal-making machine! This month's grand total was $89.52 per person. Woo! We increased our chicken breasts to six per bag for most recipes from 5 last month, and also switched to frozen breasts in the interest of time. SO SO worth it! Thanks to all the lovely ladies that pitched in to make this month a success! Next month, we plan to move out of my house and into a room at the church, if we can secure the space. First, back up a couple days, where I went to Sams Club and was that crazy mom buying 120 pounds of chicken with my two (loud) children. Oh boy.


Samantha and I were all over keeping things organized this month... as everyone filed in with their purchases, we dropped them off on the table so we could see most of everything.

Not just one but TWO handsome boys were here to hang out with us while we worked. Cass checked them out before heading upstairs for a nap :)

Carrie's 30th birthday was today and she kicked it off freezer cooking with us!

There's one person's laundry basket ready to head home to a freezer. Eight of our families are eating a total of 80 giant meals this month!

  1. *Taco Chili- 1 lb browned ground beef 1 taco packet, 1 c frozen corn, 2 cans diced tomatoes, 1 can diced tomatoes with green chiles, 1 can chili beans in sauce, 1 can pinto beans rinsed and drained
  2. *Black Bean Chicken - 6 boneless skinless chicken breasts, 1 can black beans drained, 1 c frozen corn, 1 can diced tomatoes with green chiles, 1 block cream cheese, 1 taco packet
  3. *Coconut Lime Chicken

  5. White Chicken Chili
  6. Creamy Italian Chicken
  7. Philly Cheese Chicken

  1. Thanks for all your tips and help with how to do your own freezer meal parties! I'm the sister-in-law of Emily Hoerr and have been picking her brain a little bit since I have to lead one of these (and I've never done one before!) for my church in a month. I was wondering if you had the full "freezer recipe" handy of your taco chili, black bean chicken, and coconut lime chicken? I would love to be able to use these since they're some of your favorites. Aaand, one more quick question—when a recipe calls for browned hamburger, do you ask that the person bringing that item have the meat already divided by the pound into individual gallon sized bags or does each group measure out the amount of ground beef needed for the recipe from a large bag?     1. Here's the info you asked for. If you have ANY questions at all, please let me know! I'm excited you're starting one of these at your church

      *Taco Chili (1 lb browned ground beef, 1 taco packet, 1 cup frozen corn, 2 cans diced tomatoes, 1 can diced tomatoes with green chiles, 1 can chili beans in sauce, 1 can pinto beans rinsed and drained)

      *Black Bean Chicken (2 lbs boneless skinless chicken breasts, 1 can black beans drained, 1 cup frozen corn, 1 can diced tomatoes with green chiles, 1 block cream cheese, 1 taco packet)

      *Coconut Lime Chicken (2 lbs boneless, skinless chicken breasts, 3 tbsp oil, zest of 1 lime, 1 tsp ground cumin, 1 1/2 tsp ground coriander, 2 tbsp soy sauce, 1 1/2 tsp kosher salt, 2 tbsp sugar, 2 tsp curry powder, 1/2 cup coconut milk, pinch cayenne)

      The person that brought the meat just brought it in one giant container. We used like a 1 cup scoop and just doled it out evenly among the eight bags we had this month. I know last month we had a little extra meat based on the packages we picked up at the store, so that way everyone got a little bonus
